But I only use a specific section of it, which is my Watch Later list. Is there a way to create a YT shortcut to that specific section of the app? I tried replicating this by creating a shortcut to that section the mobile browser instance, but its list and player does not have the same functionality as the app.

I will be sure to include something in the app directly to make this bit clearer. I also plan to add direct IFTTT and Zapier integrations which should make this part even more streamlined. Even if so many applications are installed, you can choose an activity smoothly. You can also use the QuickShortcutMaker for searching the app which you want to launch. If you want to use the app which you don't use frequently, maybe you have no shortcuts for it. So, you may have to
